Chicken Soup
serves 4
Ingredients
- 4 medium-sized leeks, chopped
- 2 carrots, peeled, chopped
- 3 stlks celery, chopped
- green beans, 1" lengths
- 2 T butter
- 2 qts chicken stock (see recipe)
- chicken breasts, cooked, shredded
Options
- acini di pepe, cooked in chicken broth
- spinach
Instructions
- Saute the leeks, carrots and celery in butter until beginning to soften.
- Add the stock and bring to a boil, then add the chicken and simmer to heat through. Season to taste.
- Plate and serve.
